Chickpea “Tuna” Salad

It looks like Tuna Salad
But lacks the fishy depth of Tuna Fish
(which some may find to be a good thing)

Mash:
1 cup drained Garbanzo Beans

Add:
2 spoons Hot Giardineria drained
1 Spoon finely chopped Celery
1 Spoon finely chopped Red Pepper
1 Spoon Pickle Relish
Several Capers
Small Spoon Fresh Dill
Pinch of Thyme or Oregano
Pinch of Smoked Paprika or Old Bay Seasoning

Mix with:
A good squirt of Mayonnaise
A generous spoon of Dijon Mustard

Prepare ahead
Store overnight for flavors to develop

Enough for at least a couple sandwiches

Serve on Toast with extra Mustard
and maybe some fresh Avocado
